In relazione al rilevante ruolo sanitario assunto dai microrganismi appartenenti al genere Arcobacter spp. e alla scarsità di dati disponibili in letteratura relativi alla presenza di Arcobacter spp. nei molluschi bivalvi, obiettivo del presente lavoro di tesi è stato quello di valutare la presenza di Arcobacter spp. campioni di vongole commercializzati in Puglia. I risultati ottenuti hanno evidenziato la presenza di Arcobacter spp. in 7/30 campioni. In particolare, le indagini biomolecolari hanno evidenziato la presenza di Arcobacter butzleri in 5/7 e di Arcobacter cryaerophilus in 2/7 isolati. Inoltre sono stati osservati specifici caratteri di patogenicità attestanti la differente distribuzione dei fattori di virulenza tra gli isolati di Arcobacter butzleri e A. cryaerophilus. Il presente lavoro di tesi sollecita approfondimenti volti a definire l'incidenza di Arcobacter spp. nei molluschi bivalvi per implementare e ottimizzare un controllo di filiera che includa un'accurata valutazione dei sistemi di autocontrollo e delle buone prassi igieniche al fine di garantire la sicurezza del consumatore.

Considering that several recent cases of human gastroenteritis have been associated with Arcobacter genus, and that few data are currently available about the occurrence of this genus in shellfish, the aim of the present thesis was to assess the occurrence of Arcobacter spp. that carry virulence-associated genes on clams marketed in Apulia region. Arcobacter spp. was highlighted in 7/30 samples. Subsequently, biomolecular assays revealed A. butzleri in 5/7 and A. cryaerophilus in 2/7 isolates. Studying the incidence of the virulence-associated genes revealed the widespread distribution of these genes among the Arcobacter isolates tested. Our research provides more information regarding the health risks associated with the consumption of raw bivalve molluscs, underlining the need to implement an adequate control plan by performing intensive and continuous monitoring in order to get further information to help protect and to guarantee human health.
